i really liked serial experiments lain (wiki) and it's intentionally just one season. knowing you from what i've read on the boards--i think you'll like it too... and it's not too insanely inappropriate so older kids can watch it too. aaaand from what i remember i think it'll age well.
BECK: Mongolian Chop Squad.
Lupin the 3rd Red and Green Jacket series. I've got to see what went down with Pycal. Just for the episode were Lupin meets Goemon for the first time. ..and all that 60s-70s music.

Rurouni Kenshin:- I've wanted this for quite some time. Much better redemption story than Samurai Deeper Kyo
Ranma 1/2- so funny, so full of win.
Urusei Yatsura- even funnier, even more ecchi per episode
Bastard: (Dark Angel of Destruction)!!! OVA: Nothing compared to the long running manga but it's full of heavy metal gods (D&D universe w/ rock gods) and pure dickery from the main character- hence why it's called Bastard. Very sexual, the "Supplement" Black Rainbow novel was filled with his pre-good guy exploits including raping and pillaging. He's not even actually a good guy, he's just what they're stuck with. He tries to fuck the Princess (mostly without her input) several times.
Slayers: Try
Gokudo-kun Manyuuki: If Bastard!! and Slayers had a baby that was okay for kids under 16 to watch.

Crayon Shin-chan: Way too funny

I also want to see "Crazy Monkey". It's like Jackie Chan had an anime in the early 80s.

My taste is all over the place, so I'm sure some of those you'll hate..lol. Alot of people don't like Outlaw Star because it's so similar to Bebop, but I loved it.
anime is groovy, but lets pool our money to demand stories about us by us and animated by them...

p.s. don't leave out Great Teacher Onizuka (GTO). Its secular, but soo good with hardy Confucian moralist undertones. Noir is fucking cool too--lady assassins.

GTO is hilarious! I read the manga. Never saw the anime though.
Outlaw Star is one of my fondest memories. Still has some of the best op and ed themes out there. Too bad the animation was all over the place, I liked the story, especially May's arch and the wrestling episode.

Trigun, man I spent many school nights up watching Trigun. I'll add that to my list, too. Peace and Love! ^__^V
I put off many afternoons of homework by watching YuYu Hakusho.

Damn, anime was most of my childhood.

The anime is great. Just like Onizuka. Steve Blum (voice of Spike on Bebop) voiced Onizuka.
i watch all my anime subtitled. its the only way hear the real emotion--though japanese voices are ultra gendered...

I enjoy a lot of the english voice actors. Pioneer has a great crew and Funimation ain't too shabby. They're also all pretty cool and show up an cons and do silly things. And their talent is underrated, they can all act- the days of bad dubbing are far behind us (unless 4Kids is involved).

Dave Penrod was my inner squee for the longest time. His voice was soooo sexy as Dark Schneider from Bastard and Tasuki from Fushigi Yugi. You all may know him as the voice of Cosmo from the Fairly Oddparents. Now, imagine Cosmo sounding growly and sexy: head asplode, amiright?

I also enjoy Richard Hayworth as Kenshin Himura, that's one character I did not want to hear with a female seiyuu. Goku was fine with a chick's voice but Richard Hayworth epitomized Kenshin in my head. So good.

Hip-hop anime in a Newark-esque town called Empire City. Started out as a manga done by two twinz out of Newark. Talib Kwali as the voice of the main character, Black. Check it out!
