Yes you are correct. If you have a healthy gut and not coeliac you may
eat gluten. It is found in quite a few meat substitutes, sauces etc. Of course if you
are exposed to it mainly due to bread, try and stick to whole grain breads
and not white or brown bread. Grainy breads are a good source of B vitamins,
especially as some brands are fortified.
There is a school of thought that believe that if you have a certain blood type
you should avoid gluten. But I would not worry about it. Variety is the spice of life,
so small amounts & variety is the key to a balanced diet, whether you are vegan or vegetarian.
